GROWING The grapes for this blend were selected from prime vineyards in two Regions. Langhorne Creek has a maritime influence which moderates the climate. The Shiraz wines from here are quite austere and tightly structured which age immaculately well into rich, intensely flavoured wines. The other region, Gundagai, lies in the foothills of the snowy mountains. The red wines from Gundagai show intense up front fruit and well-rounded mouth feel. WINE MAKING Shiraz has been a focus for the winemaking team in recent years and our best batches of Shiraz were selected for this blend. We aimed for intense fruit flavours and soft supple tannins. These characteristics have been complemented by oak maturation, which has further increased the complexity of the wine. The grapes were fermented in overhead red fermenters with remontage to allow for colour and flavour extraction from the skins. This contributes to the apparent up front fruit aromas.
